banana chocolate trifle

the perfect summer party dessert. 

guess what?! my brother turned 18 today! scary right? so i've sort of made it a tradition to make the dessert as part of my gift to whoever's birthday it is, so my brother requested banana something - mmm how about banana trifle? i modified it to be banana chocolate....

i used cupcakes that i had made a couple weeks ago and stored in the freezer, and i'll give you the recipe for those. [IT'S THE BEST YELLOW CAKE/CUPCAKE RECIPE EVER! I WILL NEVER EVER EVEN DREAM OF  USING ANYTHING ELSE.]


- cake {to crumble, so it doesn't matter what form}

- pudding mix {vanilla, chocolate, and banana}

- bananas {the riper the better in my opinion} 

- homemade whipped cream 
      <> in the Netherlands you need to go buy 'slagroom' and 'klopfix' (a.k.a. 'sahnesteif' in German... we buy ours in Germany). so then you just whip them together with a hand-mixer (1 packet of klopfix per 250 ml of slagroom) and add a bit of sugar to it. 
      <> in the USA, i made it with heavy whipping cream and sugar. you whip the heavy whipping cream with a hand-mixer, whip in some sugar, until it's stiff. 
      <> i hope y'all can find a method that works for you. :)


1 cup unsalted butter
2 cups sugar
1 1/4 teaspoons vanilla extract
4 eggs
3 cups sifted cake flour
1 tablespoon baking powder
1/2 teaspoon salt
1 cup milk

Preheat the oven to 350 degrees F.

In a mixer with a whip attachment, cream the butter until light and fluffy. Add the sugar and continue to cream. Gradually add the vanilla and eggs and mix in well. Sift together the dry ingredients; then mix into the butter mixture alternating with the milk. Pour batter into cupcake paper-lined muffin tins filling them 3/4 full. Bake until puffed and firm in the center and light golden brown on top, about 20 to 25 minutes. Let cool.


- crumble up the cake {i think i used 14-16 cupcakes} 

- get a massive bowl {mine was ginormous. and i needed all the space in it.} 

- put in a cake layer -- a 1/3 of the cake crumble

- a layer of sliced bananas

-  vanilla pudding -- follow the instructions on the pudding mix but instead of pouring it into a mold, pour it into the bowl to form a pudding layer {stick it in the fridge for a couple minutes -- this will also allow you time to recover from the mess you just made while making pudding.}

- cake layer

- banana layer

- banana pudding layer

- WHIPPED CREAM. {make it right before you put it on. don't premake it.}

- then decorate as you wish. {if you decorate with banana, i would highly recommend decorating it just before serving it. otherwise the bananas will go brown because they are not sealed.}

it was a great success. after eating our share, we had way too much left. so my brother and i took it over to the boarding house of my school and they finished it all off. it was quite popular. so make it. eat it and drift away to paradise. ;)
